Dercsényi devoted extensive study to the viticulture and winemaking of the Tokaj-Hegyalja region, paying particular attention to its geology and the influence of mineral conditions on wine production. He published numerous shorter studies and several books on the subject. He also cultivated vineyards on a number of estates, which are mentioned in clause 9 of his will: “the freehold house at Tokaj, together with the vineyards, cellar, and wines… the freehold vineyard at Szeregnye, the house at Munkács, vineyards, cellars, wines, and all other appurtenances”.
